New York City’s Yuji Ramen is coming to Japan’s Shin-Yokohama Ramen Museum next month

In an instance of “reverse importation,” the American eatery’s noodle soup will soon be featured at Japan’s preeminent ramen museum. 

The Brooklyn-based Yuji Ramen has recently been elected to join the ranks of other ramen greats at Japan’s Shin-Yokohama Ramen Museum with its grand opening on Thursday, March 16.

Japan boasts a total of three major museums dedicated to the now internationally beloved noodle soup. While the Momofuku Ando Instant Ramen Museum in Osaka and the Cup Noodles Museum in Yokohama are largely dedicated to the historical origins of instant and cup noodles, the Shin-Yokohama Ramen Museum just south of Tokyo remains the most convenient place to sample an actual bowl of steaming, freshly made ramen from a selection of regional Japanese specialties.

As part of the museum’s 20th anniversary celebrations three years ago, the venue began showcasing more global varieties (including gluten-free ramen). Brooklyn’s Yuji Ramen will be the fourth such international member to join the lineup at the museum’s basement food court designed to be reminiscent of a nostalgic Tokyo street from 1958 (the year that instant noodles were invented).

So what sets a bowl of Yuji Ramen apart from the hundreds of other bowls of ramen scattered throughout New York City, let alone the world?

The driving force behind owner Yuji Haraguchi’s recipe is his signature tsuna-kotsu (“tuna bones”) broth in which leftover pieces of tuna (after being filleted) are roasted over a high flame in a kombu dashi stock seasoned with yuzu zest and pepper, resulting in a cloudy, robust soup bursting with flavor. Add some superfine noodles, a slice of fatty tuna belly meat, shredded nori, scallions, and sesame seeds as garnish, and you have an incredible culinary creation.
